FOUGASSE - BREAD MACHINE RECIPE

Put the ingredients into the baking pan in the following order: water, olive oil and salt.

Then add the flour and the dried yeast.

Place the baking pan in the machine. Select program 13 (dough). Press the “stop/start” button.
 

After one hour, switch off the machine and remove the dough from the baking pan.

Flour a flat surface and make a slightly flattened, elongated ball of dough. Roll it out and make cuts in the form of ears of corn with scissors.

Leave to rise for 20 minutes at room temperature.

Pre-heat the oven to 220°C (th. 7-8) for 5 minutes with a bowl of water to humidify the oven. Brush the dough with water to dampen it.

Put it in the oven and bake for 25 minutes. Leave to cool on a rack.
