1- Whisk the egg whites to a peak.
2- Gradually blend in the sugar.
3- Pour equal quantities of caramel into the 4 ramekins and fill with the peaked egg whites.
4- Using the microwave function, cook for 50 seconds at 900W or 1 minute at 850W, depending on your oven.
5- Leave to cool then empty out onto a plate.
6- Pour a circle of custard around each « island » and serve chilled.
