1- Peel and deseed the tomato, chop all of the vegetables into small cubes and place in the casserole dish.
2- Pour in the olive oil and 500ml water.
3- Using the microwave function, cook for 15 minutes at 900 W or 17 minutes at 850 W, depending on your oven.
4- Remove the casserole dish, add the vermicelli and 200ml of water.
5- Stir gently. Check the seasoning.
6- Using the microwave function, cook for 3 minutes at 900 W or 3 minutes at 850 W depending on your oven.
7- Serve with grated parmesan cheese on the side.
For a more wholesome soup, add haricot beans, which are a tradition ingredient of minestrone. Simply add 4 tablespoons of tinned beans and mix with the other vegetables in stage 1.
