1.Peel the potatoes cut into 6cm (1/4 inch) slices. Cut each slice at 6cm (1/4 inch) intervals.

2.Place in a colander and rinse under hot water. Pat dry on paper towels.

3.Batch fry for 2 minutes at 190°C (374 °F). Remove from fryer and drain on paper towels. Batch fry remaining potatoes.

4.To crisp potatoes, continue frying them in batches until crisp and slightly golden. Seasoning with salt to taste.
