1- Soak the sandwich bread in the milk. Remove gristle from chicken livers. 2- Strain the milk from the bread and mix the chicken livers with the bread. Add the eggs, cream, potato flour, shallot, chopped garlic, Madeira and parsley. 3- Blend the mixture for 1 minute. 4- Pour into a buttered dish. 5- Using the microwave function, cook for 7 minutes at 900 W or 8 minutes at 850 W depending on your oven. 6- Serve hot. Serve this dish with a tomato and basil coulis. For a more original twist, try serving a shellfish bisque.

200 g chicken liver, 2 slices sandwich bread, 3 tablespoons milk, 2 tablespoons cream, 1 tablespoon potato flour, 3 tablespoons Madeira, 1 shallot, 2 cloves of garlic, 2 eggs, 2 spoons chopped parsley, salt, pepper. Utensils : One 14cm Pyrex soufflé dish, 1 blender.
