2- Cut the crusts off the bread. Place the slices of cheese on 3 slices of bread and sprinkle parsley on the cheese. Cover with the other slices of bread. Press together firmly. Cut each piece into 4 squares.
3- Dip in the egg mixture and roll in the breadcrumbs.
4- Fry at 170° C for 3 to 4 minutes.
Hint: swap the parsley for basil and serve with a thick tomato sauce.
