1. Slice potatoes as thinly as possible. Soak in a colander under hot running water. Dry well with paper towels.

2. Drop several potato slices into the fryer.

3. Fry at 190°C (374 °F), stirring down with a wooden spoon, until very golden brown and very crispy. Season with salt
