Tuna Triangles

1. Drain the tuna well. Mash together the tuna and eggs and add the parsley.

2. Put a spoonful of the tuna mix onto the edge of the phyllo dough and fold into a triangle. Seal the edges of the triangle with the beatenegg.

3. Fry at 180°C (356 °F), 3 minutes, or until slightly golden brown.

  • 8 sheets phyllo dough
  • 1 can white albacore tuna
  • 2 hard boiled eggs
  • 1 Tbsp. parsley
  • 1 egg beaten with a pinch of salt
  • Salt and pepper to taste
